This line of flavors was developed at CRAMER by a multidisciplinary team of experts, including process and food engineers. The granulated format they created contributes flavor in 0.8 mm-diameter particles that are ideal for cold or hot infusions and candy.

This feature prevents particles from falling out of infusions packaged in pyramid tea bags, so consumers have an intense flavor experience when enjoying a cup of tea, an infusion or mate, for example. Fruity, herbal, spiced and other notes like caramel and honey are great fits for this category.

In the candy category, color is an important attribute because it adds a seal of distinction that makes the product more attractive and allows confectioners to play with the visual aspect of the final product. However, the granulated format also plays an important role since its size and texture create a very positive effect in the mouth, setting it apart from other ingredients. Similarly, since the aromatics dissolve more slowly in the mouth, flavor perception lasts considerably longer. Flavors and colors can also be combined in the same application or used to give a crunchy effect in cookies. Mint and orange profiles are in high demand in the candy market, especially for chocolates. Another, bolder option is berry punch, a fantasy flavor inspired by American candy that is ideal for any type of hard candy or taffy.

Whether in infusions or candy, “granules have a broad range of applications for making attractive, unique products,” comments Diana Cortés, Sweet Flavor Specialist.

Due to the success of the Grainseal line, this year “CRAMER has increased our production capacity, enabling us to better meet our customers’ needs,” explains Daniela Piderit, Head of Flavor Research and Sensory Evaluation. She adds that a new team was recently put together to create new flavors, drive more research in this area and expand this line’s portfolio, which today provides excellent alternatives for attracting new consumers.
