The concept of food safety speaks not only to the importance of making sure food poses no risk to people’s health. It also aims to ensure sufficient and timely availability of nutritious food for the entire population. With this purpose in mind, the United Nations (UN) set aside this special day for the first time in 2018 and chose the theme for 2022 of “Safer food, better health.”

This decision demonstrates the importance of assuring safe food for the world, considered a humanitarian commitment for a large number of countries around the globe and protected through initiatives from multiple organizations, such as the World Health Organization (WHO), the Food and Agriculture Organization of the United Nations (FAO), the U.S. Food and Drug Administration (FDA), the Flavor Extract Manufacturers Association (FEMA), the Joint FAO/WHO Expert Committee on Food Additives (JECFA), the Chilean Health Ministry (MINSAL), the Chilean Food Safety and Quality Agency (ACHIPIA) and the Codex Alimentarius, among the most important.
